I'm getting "Cannot create the folder Volumes/ /Library/Filemaker 
Server/MyFolder/"

Cannot create?  I didn't ask you t create. It's already there.

Is that space in the middle of the path and accident of typing, or is
it in the original error message?  If the latter, something has got
seriously screwed up!

It was in the error message. Restarting the server fixed it; just had to 
wait till all the users went home.
