How to make single sided copy of front & back?

Problem:

Scan front and back of check so that you end up with a single page PDF 
(both sides on one).

Brute force solution:

I have looked at both preview and acrobat. About the only sure way I can 
figure out is:

- Scan front of check
- Turn check over moving down glass and scan back
- Print front of check then refeed page and print back
- Scan result

This is just way too much work. I'm sure there is an easier way to get 
the front and back of a single check printed on a single page.

If there is an option in preview or acrobat to 'merge' two pages into 
one, I missed it. But that would probably work.

Open text document
Paste Front
Copy Back
Paste Back
Print to PDF

Yeah. Same basic process as printing only you don't waste the paper.

I'm really looking for something a bit more automated as there are 
literally thousands of these to be scanned.

Place as many checks as will fit on your scanner.
Scan
Turn checks over
Scan.
Repeat until done.

In Acrobat:

Create PDF: From Scanner

In the window, select Sides: Both Sides

Then Robert is the male sibling of one of your progenitors.

Find a modern photocopier.
Press the 2->1 button
Put the check on the glass
Press start
turn the check over
press start
put another check on the glass .....

Oh, you want them on the _same_ side of the paper.

Put check near the end of the scanner.

Start scan.

As soon as the light bar comes out from under the check, flip it over 
and put it back down _ahead_ of the moving bar.

If you're REALLY fast, you can even do this on a photocopier.
But scanners are slow, especially if you select high resolution.
