Eureka !
Rented a movie on itunes and they must have fixed something vecause
there is now a way to choose between stereo and dolby surround.
(last movie I had rented indicated on the itunes store that it was dolby
5.1 but it played stereo only).
But I just rented a new movie and low and behold 5.1 is now available.
In the itunes menu, there is the Controls-> Audio & Subtitles. This gets
you a selection between stereo and dolby 5.1
In the quitime 10 control panel that appears over the movie, there is a
"quote" symbol ( what they use to put text that cartoon characters
speak). (It is the second symbol to the right, between the "full screen"
and the chaopter selection buttons.
This gets you to select between stereo and dolby.
However, this funtionality is not enabled for all movies. Movies I
purchased in the past don't let me select sound format (the Menu option
is greyed out, and the quicktime panel doesn't have the quote button).

*Lo* and behold. "Low" explodes in the reader's face like a stink bomb.
I sincerely apologize again.
