Batch editing/processing PDF files with Acrobat?
Any capability in Acrobat to do editing tasks in batch mode on a folder
full of PDF files? -- as an example, enter identical data into Document
Info fields of a bunch of files all at once?
(Without getting into AppleScripts or other macro methods?)
(Also, just to ask again: any way to make a dbl-clickable desktop alias
that will open Acrobat Reader with the Edit >> Search mode >> Query
dialog window already open and on screen?

As far as I've seen, all the batch-processing capabilities in Acrobat
are javascript-based (except for the AppleScript support of the Mac
version, as you mention).
I suppose you could export all the PDF files to PS, batch-process those to
insert the necessary pdfmark stuff and then re-distill them. I kinda doubt
it would be any easier or faster, though.
There are probably plug-ins to do that sort of thing. A google search for
"acrobat plug-in 'document info' batch" turns up some things that seem to
be worth looking into.

There's the Batch Process feature. Don't know if it can specifically
do that task, but it's worth a look. Introduced in 5.0.

Yup, "Batch Process" is right there in the Help file Index in my copy of
5.0. Thanks much, I should have looked there first.
